Sexy Kale Salad: Vegan Ultrarunning Recipes

I truly enjoyed sharing my personal story about how and why I became a vegan ultrarunner.  Based on feedback, I feel the information was valuable to many readers.  I would like to continue sharing my knowledge of a plant-based diet with a series of posts, which will help provide you some recipes and techniques. One of the myths about eating healthy is that it takes “too much work”. I can assure you that eating a plant-based diet is not difficult! I didn’t become a “cook” until I made the commitment to a plant-based diet. Basically, I only know how to prepare food in the vegan style.

In these recipe posts, I will share some of my favorite dishes and display just how simple this type of food preparation can be. I will compliment each post with quick 1-2 minute videos demonstrating the preparation. The first recipe I will share is a raw kale salad I have named, “Sexy Kale Salad”. I love this dish like you wouldn’t believe! It has diverse texture and flavor, including sweet, hot, tangy, crunchy, and crisp. I eat it about 3 days per week. As you will see in this 1 minute video, it is very easy to prepare. I often modify this salad by cooking some ‘Gardein’ steak cubes or Gardein Scalopini. Both can be found in the frozen health isle.

    I made this for supper tonight. I didn’t have agave, so I fried up some tempeh with a maple syrup glaze and threw that in instead. It’s super! Easy and awesome!
